Present our Holiday Champagne and Bubbles tasting

Marcato, Durello Brut Lessini DOC, Italy

You couldn't ask for (or probably find) more bang for your buck than this. Produced from the grapes sourced from the I Prandi vineyard within the Lessini DOC. Made of 85% Durella, 10% Pinot Noir, 5% Chardonnay. It is fermented once, then blended and bottled for secondary fermentation in the bottle as in Champagne. Straw yellow color, with complex citrus, acacia and honey aromas create a medium palate with light exotic fruit flavors and nice minerally acidity. Perfect with fish and seafood. Durella is a white grape of higher acidity, excellent for the production of Champagne-style wine. The name Durella probably comes from the hard bowl of the berries, since duro is called hard on Italian. Originally, Durella was a major grape of Soave wines. 

Sieur d'Arques Crémant de Limoux

Beautiful French sparkling wine. Delicate with long-lasting bubbles.  The nose is a subtle, complex blend of aromas from the composition of the blend, and secondary and tertiary aromas from aging on lees. White flower, pear and peach followed by toasted brioche, and fresh butter aromas make a harmonious bouquet. The overall impression is fresh and lively. A clear, lively attack and a pleasant smooth sensation provided by the delicate bubbles create an appetizing palate. Overall this wine is harmonious, fresh and subtly elegant.
This crémant, made from a blend of Chardonnay, Chenin, Mauzac and Pinot grapes, is the fruit of careful selection at every step of production. Elaborated by the traditional method of second fermentation in the bottle,

JM Gobillard, Brut Tradition Champagne NV

Hautvillers, the birthplace of Champagne.  The Monk, Dom PÉRIGNON gave birth to the first bubbles from Champagne around 1681 in our village, Hautvillers. Our Brut Tradition champagne pays homage to the Dom Perginon. It is supple and fruity in taste with harmonious aromas of biscuits and citrus. This cuvée is produced using the traditional assemblage of the three grape varieties of the Champagne region: 1/3 Chardonnay, 1/3 Pinot Noir, 1/3 Pinot Meunier. In order to maintain consistency of taste from one year to the next, reserve wines are used to complete the assemblage process. Aged for at least 2 years in the cellars.

Cava Lacrima Baccus Rose Cava, Extra Dry, Spain

From the Penedes area of Northeast Spain, this enticingly bubbly Rose Cava shows red fruits, milk chocolate and rhubarb flavors and an off-dry finish. An interesting and different cava to try with dark chocolate. It is also made from the Champagne method with the second fermentation in the bottle.

 Sam Smith's Organic Cider        

We are going a little different tonight to add in a new bubble, Cider.  Apple cider has a long history in America - it was a common drink even in the 1700s, before cider mills began to give free apple seeds to Mr. John "Johnny Appleseed" Chapman around 1800. But the popularity of cider has grown strongly in the US since the early 1990s due to its approachable flavor, light body and refreshing crispness.  Apple juice used to produce cider contains a mix of apple varieties selected to balance fresh apple flavor with tartness, acidity, and sweetness. Samuel Smith's uses a wine yeast strain to ferment their cider, providing a clean finish and allowing pure apple flavor to shine through. Samuel Smith's Organic Cider is a bright straw-gold with excellent clarity, presenting a light body with brilliant conditioning, a crisp clean flavor, and a dry finish. It's 5.0% alcohol by volume. And, it is actually high in anti-oxidants, so it is good for you too!
