Lively sparkler with a persistent, frothy mousse. Elegant scents of green apples, white wildflowers, minerals, and glazed almonds. The palate is dry with flavors of yellow cherries and tropical fruits, and a very long, lingering finish.

Clean, crisp white made from combining Pinot Blanc with Pinot Auxerrois, similar to a Burgundian style Chardonnay.  The wine is fresh, fruit forward, filled with melon, minerals and honey.  This well structured wine pairs well with a variety of dishes from shellfish to poultry to beautiful salads.

Successful cheesemaking requires great patience and attention to detail.  Once made each wheel must be regularly and carefully tended by turning, washing, and brushing.  The qualities required for such work are what makes Brazos Valley cheesemakers Marc Kuehl and Rebeccah Durkin so well suited to the art of cheesemaking.

Mr. Lemley grows a wide range of produce year round, on his farm in Canton.  What he doesn’t grow, he picks up from other nearby farms on his way to Dallas Farmers Market.  Mr. Lemley who says he doesn’t advertise, attributes Farmers Market Friends for a great deal of his successful 30-plus year presence at the Dallas Famers Market.  He says, “It is costing more to grow vegetable these days”.

The Tassiones grow specialty greens, salad mixers and herbs and have been farming for approximately 11 years.  “Everything has gone up but the price of produce,” Tassione laments but he has found that working directly with the area chefs has proven to be successful for him.  On the subject of the current legislation, he says, ““How can we pay (for these extra costs) and stay in business?  If the Bill passes, you’ll cut out (the accessibility to) ...anything fresh”.
