Wine Maker Dinner with Lisa Peju of Peju Winery and Bob’s Steak and Chop House
Opening Reception PROVENCE “If you can imagine the structure and texture of a fine Pinot Noir, with full-flavored plummy fruit, that’s what you get here. Full of ruit, dry, and enjoyable from the get-go. - Epicurean WINEMAKER NOTES: A proprietary red and white blend of Cabernet Sauvignon, Merlot and Zinfandel (30/16/8) with Chardonnay and French Colombard. This year’s blend consists of approximately 62% Estate red wines, barrel fermented Estate Chardonnay, along with French Colombard from Mendocino County. SENSORY DESCRIPTION: Aromatic notes of bright cherry and raspberry tartlets, with a slight touch of cranberry and pretty floral notes. It displays flavors of fresh ripe red fruit with a hint of strawberry rhubarb pie. Its pleasing impression on the palate is followed by a refreshing finish which begs for a second glass. SAUVIGNON BLANC WINEMAKER NOTES: Harvested Aug. 9, 13 and 22, 2007. Picked in three stages of ripeness. The first stage was harvested at 19.5 Brix, the second at 22.0 Brix and the third at 22.8 Brix. The three stages each add a different component to the wine. The first stage offers aromas of fresh pineapple, the second adds a crisp citrus component, and the third yields grapefruit and exotic fruits. Blending the three stages together allows us to create a wine that has layered flavors and aromas. 94% Stainless Steel, 6% Barrel Fermented. 100% Sauvignon Blanc, 13.5% Alcohol. * Only 3100 cases of this wine was made in 2007 SENSORY DESCRIPTION: Pale straw yellow in appearance. Aromas of tropical fruit mixed with fresh citrus, lychee and passion fruit. Crisp, fresh and lively on the palate, with vibrant grapefruit notes, apricots and hints of tropical fruits, guava and fresh pineapple. Long lingering finish. Suggested Price is $18.00. Paired With Bob’s cocktail, remoulade and fried Second Course 2005 CABERNET SAUVIGNON WINEMAKER NOTES: 2005 Napa Valley Cabernet Sauvignon was crafted from hand-selected Napa Valley fruit. After harvest, the fruit spent extended maceration time on the skins for deeper color and flavor components. It was then aged 18 months in 40% new French & American Oak. 81% Cabernet Sauvignon, 16% Merlot & 3% Petit Verdot from our organically farmed Rutherford Vineyard & sustainably farmed Persephone Vineyard. SENSORY DESCRIPTION: Our 2005 vintage reveals a lovely nose with aromas of dark black cherry, bittersweet chocolate and hints of bay leaf. On the palate, the dark garnet wine is rich and concentrated with layers of plum, holiday spice, tobacco and dark cocoa. Velvety tannins provide a long, memorable finish. The Alcohol is 14%. The wine was bottled 7/07, and just released in April 2008. It can be enjoyed now, or has the potential aging of 6-8 years. Suggested Price $45.00.

Third Course 2005 MERLOT WINEMAKER NOTES: The combination of outstanding fruit, ideal ripeness and premium barrel
aging makes our 2005 Merlot extraordinarily elegant and velvety if enjoying now or in years to come. After harvest, the fruit spent 16 months in barrel to achieve solid structure along with subtle hints of spice and
toasty notes before spending an additional 10 months aging in bottle. The wine is 87% Merlot, 11% Cabernet Sauvignon and 2% Cabernet Franc from our organically farmed Rutherford Vineyard and sustainably farmed Persephone
Vineyard. Alcohol is 14%. Released in April 08, this wine has the aging potential up to 8 years. * Only 3500 cases of this special wine were made and released in 2008. Paired with Bob’s Traditional CHOCOLATE CAKE with Chocolate Fudge
